    Les Terres Froides: 100% Chardonnay

    Terroir: Premier Cru Tauxières on Montagne de Reims. 40-yrs old parcel called Les Fourches, facing Bouzy. Northern Exposure. Chalk and clay. 165 above sea level.

    Winemaking: In a mix of French oak cask, concrete eggs and ceramic amphorae. Fermentation with “Fabrice Pouillon method” and indigenous yeast.

    Bottling and ageing: Bottled in April 2021. Disgorged March 2024.

    Production: 3,240 bottles
