This heritage of olfactory precision paved the way for a transition into wine, led by true pioneers like Marcelle Jacob, who in 1945 became one of France’s first female oenologists. Today, the estate is steered by brothers Frédéric and Laurent Fery, who have embraced a "New Burgundy" spirit under the guidance of talented winemaker François Lecaillon—an alumnus of Domaine de la Vougeraie and a protégé of whole-bunch specialist Armand Heitz.

Spanning 33 hectares across a mosaic of tiny, prized parcels from Gevrey-Chambertin to Puligny-Montrachet, the domaine has been certified organic since 2011. With micro-productions averaging just 2,000–3,000 bottles per cuvée, the winemaking is a study in transparency: using indigenous yeasts, long press cycles for whites, and varied whole-bunch proportions for the reds to achieve a perfect tension between structural freshness and intense fruit energy.

This transition has caught the attention of the industry’s most respected critics; Jasper Morris MW recently noted the domaine's ambitious "upgrade" toward a greater sense of both "precision and excitement," awarding solid scores and praises for this exciting range of Burgundy wines.
