Adrien Dhondt-Grellet's 'Le Bateau' Vieille Vigne is the wine that puts him in the conversation with Champagne's absolute legends. It's a single-parcel, 100% Grand Cru Chardonnay from vines planted in 1951 - some of the oldest on the entire estate.
This small plot in Cramant is farmed with obsessive care, yielding an ultra-concentrated, textural wine that speaks volumes about the terroir. The 2019 Vintage is particularly brilliant, earning an immense 98/100 from The Wine Advocate, who called it "arguably the most harmonious wine of his 12-year winemaking career."
Forget delicate bubbles; this is Champagne with Burgundy power. It's built in the cellar using barrels (influenced by Adrien’s love of Burgundy winemaking) and disgorged with a tiny, bone-dry 1 gram per litre dosage.

During our last visit to Villers-aux-Nœuds, he introduced us to this new Rosé style—a transition from Saignée to Assemblage in pursuit of greater freshness and drinkability. By blending a touch of macerated Pinot Noir into his nervy, old-vine Meunier juice, he has traded "gastronomic" weight for a high-definition elegance that has already earned a stellar 94 points from The Wine Advocate on its first release.
The 2022 base bursts with pomegranate, blood orange, and rose petals. On the palate, it is medium-bodied and graceful, trading robust power for a crystalline energy and a sophisticated mineral snap. Brochet believes this method yields a more drinkable and translucent expression of the terroir, resulting in a Champagne of total equilibrium that is lighter and more "nervy" than prior renditions.
The soul of the wine lies in the 1965-planted massal selection vines from the La Motelle lieu-dit. This organically farmed, old-vine fruit provides a depth and tension that only deep roots can offer. Our allocation of this new release has just landed, but given the cult following for Brochet’s micro-production wines, these bottles will move quickly.

This is, quite simply, one of the high points of Adrien Dhondt’s entire portfolio. The 2019 Les Nogers is where Adrien has fully realised the incredible potential of this single, complex Premier Cru lieu-dit in Cuis.
Sourced from Chardonnay planted by massal selection in 1974, Les Nogers is fascinatingly complex, drawing from two altitudes and two distinct geological profiles within the same site. The most pronounced, intense barrels—matured for 11 months, with about one-third new oak—are selected for this final, powerful blend.
The wine is jaw-droppingly expressive. It emerges from the glass with a bouquet of honeysuckle, cedar, tangerine peel, and smoke. On the palate, it is full-bodied, concentrated, and intensely layered. Compared to his other superb releases, the Les Nogers is decidedly more fleshy and textural, yet perfectly balanced by significant dry extract and focused acidity.
This is a world-class, single-vineyard Champagne built for the cellar. Well worth seeking out.

Sourced from the chalk-heavy soils of Trépail and the depth of Écueil, it represents a thoughtful marriage of the Grande Montagne de Reims’ best instincts. Visually, it pours a shimmering pale gold with emerald glints, backed by a fine, rhythmic perlage. This is the very essence of Cramant delivered by one of Champagne’s most exciting talents, Adrien Dhondt.
Sourced from two legendary lieux-dits—the incisive, strict character of La Garenne (deep clay-sand) is perfectly balanced by the powerful, concentrated muscle of Les Longues Verges (pure chalk). This cuvée is a testament to Adrien’s visionary work: a self-taught innovator who believes in living soils, Burgundy-inspired barrel work, and harvesting at full maturity.
The blend is driven by the 2021 base, complemented by 30% of a historical reserve blend. It sees judicious élevage in barrel (around one-third new), lending a gorgeous, textural patina to the wine.
You'll find concentration and incredible harmony here. Notes of lemon zest, cedar nut, smoke, and toast lead the way. Despite the high-acid vintage, the wine is bright, lively, and intensely expressive, concluding with an immensely long, saline finish.
This is Grand Cru Chardonnay at its most dynamic. Adrien’s Champagnes have earned the estate celebrity status for their character and vinosity—once you taste this new release, you’ll understand why.

On the palate, it’s instantly expressive and ample, revealing a sophisticated profile where apricot, tangerine peel, spice, ginger, and lemon confit all interlace. A subtle touch of oak adds texture without dominating the precise fruit. The character is lights-out compelling, culminating in a flourish of tropical fruit and spice that lingers on the close.

Les Noues was one of the only lieux-dits deemed suitable for a standalone cuvée, making this a rare bird in Savart's already highly sought-after Champagne range.
Opening in the glass, the bouquet is bright and intense: orange rind, crisp pear, fresh red berry fruit, and brioche. It is medium-bodied, driven by a refreshing core of fruit and exhilarating, racy acidity. It concludes with a long, intense, and distinctly chalky finish.
Crafted with immense care, this Champagne is both incisive and age-worthy, as it is dangerously drinkable now, in Savart's classic fashion. One for the gourmands.

Grown on the chalky slopes of Mareuil-sur-Aÿ, Pouillon's Solera champagne is made from vintages dating back from 1997 to 2020. Topped up with each new harvest to ensure freshness is maintained within the wine, it has distinctive complexity and nuance.
This is a Champagne that combines lots of different wines in one! It reflects the way in which it was made, a subtle combination of assets: the heat of Mareuil’s legendary slopes, the cold of deep chalk and the crispness of the maturing process. On the palate there are distinct flavours of dried candied fruit and minerality.
This wine is big, bold and beautiful. Aged in old French oak and the use of indigenous yeast, it spends 36 months on laths and then a further 18 months in bottle. 2023 Laurent Pataille, Marsannay Es Chezots

Wine is deeply rooted in the Pataille family’s heritage. His father owned vineyards in the Médoc, while his brother is a respected producer in Burgundy. Laurent, however, has forged his own path, patiently refining his understanding of viticulture, vineyard management and precision winemaking. During his five-year tenure at Château de Tracy, he developed a philosophy that combines modern farming techniques with deep respect for traditional practices.
Today, the estate is farmed organically, with each parcel treated individually to preserve its unique identity. It is these precise techniques that has enabled the 2023, Marsannay Es Chezot to present as a beautifully delicate and perfumed wine. Aromas of violet and rose lift effortlessly from the glass, while the palate is supple, refined and elegantly textured. A superb partner to be drunk alongside lamb cutlets, roasted poultry, or simply enjoyed on its own. This is a graceful and characterful Burgundian red wine from a producer firmly on the rise!
2024 Fanny Sabre, Beaune Premier Cru Les Chouacheux

Beaune Les Chouacheux comes from one of the Côte d'Or's most intriguing climats; a walled vineyard set on the lower slopes of the Côte d'Or escarpment, just west-southwest of Beaune. Long appreciated by those in the know, Les Chouacheux remains something of a hidden gem, capable of producing wines of remarkable charm and character. So much so, wine critic William Kelly has begun cultivating vines here!
Made from 100% Pinot Noir, this cuvée is beautifully fresh, finely textured and impressively complex. Aromas of ripe cherry, sweet spice and cinnamon rise from the glass, leading to a supple palate with lingering elegance and poise. It is a superb expression of Fanny Sabre’s craft!
2023 Fanny Sabre, Savigny-Les-Beaune
Burgundy, France | 100% Pinot Noir
Fanny works her magic on Savigny-Les-Beaune, proving this appellation’s soul can be more silk than muscle. Sourced from 30-year-old vines on the clay-limestone slopes near Pernand-Vergelesses, this 2023 is all about fragrant energy -think wild strawberries, a pinch of white pepper, and the scent of rain on warm earth.
Whole bunches were fermented in open-top oak vats, with gentle punch-downs that tease out perfume without brute force. Aged for 11 months in a mix of 400L barrels and large oak vat, it was bottled unfiltered to preserve every bit of vibrant life.
The result? A Savigny that’s surprisingly light on its feet -juicy, immediate, and made for pure drinking pleasure.
2023 Maison Réno, Maranges Premier Cru La Fussière

One of Maranges' hidden gem gets the Réno Pacalet treatment. From 45-year-old vines on southeast slopes, this Premier Cru bursts with wild strawberry, peony, and a touch of game. Whole-bunch fermentation (no sulfur) amplifies the terroir's sunny generosity while keeping Burgundian structure, with a tight tannic grip and impressive lenght and focus. 1,250 bottles made. 2020 Yann Durieux, Grands Ponts Blanc

Half aged in new demi-muids from a cult Chassagne cooper, it walks the tightrope between toasty richness and laser-cut acidity. Patrick & Sara (those Brits who ditched it all for Burgundy) nailed the élévage here – just enough oxygen to coax out complexity without losing that nervy Pernand energy. Four and a half barrels. That’s it.

Named after Fanny's youngest, this is Burgundy's answer to Beaujolais—a juicy, pepper-spiked romp through iron-rich soils near Pommard. The Pinot brings wild strawberries, the Gamay adds a playful bounce, and that ancient Pliocene sand adds a floral touch. Fanny's magic makes it absurdly drinkable, especially when lightly chilled.
Warning: bottles have a habit of emptying themselves rather quickly once opened, and wine bars keep depleting our stocks. Next time you look, there might be none left.

Sourced from a beautiful, steep parcel near Arcenant, this Pinot Noir is an ethereal and textural masterpiece. It floats from the glass with an incredibly perfumed burst of red cherries, wild raspberries, cranberries, and red plums, lifted by a fascinating hint of dried clementine. On the palate, it takes a captivating turn, revealing a darker, more savoury depth that keeps you coming back for sip after sip. It’s all delivered with impossibly smooth tannins and vibrant acidity.

An explosive wine! While bright in colour, this reveal a deep, endless core of dark red fruit and floral nuances with ultra-refined tannins. Enticing and contemplative, this is a real charmer.
